Phu Quoc, Vietnam #12

Today was the day my dad was born 76 yrs ago – he has been gone seven years already… which is crazy!!
Anyway, we started with our Java's and breakfast left over sausage/veggie stir-fry in scrambled eggs with some rice. Jeff wasn't feeling any pain in his knee, but i felt mine a wee bit. So we decided to take it easy today… laid back day plan.
We did go for a easy swim in our pool. Jeff felt his knee twinge a bit at the end of our swim, but I never did. We went back and had lunch. We made our our own Banh Mi with the rest of our leftover chicken (we ate more last night than I thought!). But the sandwiches turned out great with the last of the greens, and cucumber; plus that sauce we got with the chicken. Super excellent! Afternoon was more of “takin' it easy.”
Around supper time we decided to go to the rotisserie chicken place, but to try his sausages. So we loaded on the scooter. We went first to the grocery store outside of Sunset Town, and then a wine shop. Now we went to the rotisserie place, but he did not have any sausages! Bummer! We did not want more chicken (even though it was good and the chickens he had now looked great). So we loaded back up on the scooter and went to Tiem An Mami for some Pho, and My Xao Bo (Xuat Nho), which is Stir-fried Beef Noodles (Small Size). We had to sit and wait, but they brought us free tea and some melon slices for “our trouble” waiting. That is stuff that happens here. But the food is prepared from scratch when you order. So it is worth the wait. We took our order and went back to our place. It was soo good!
Sunset was behind a big bank of clouds, so we did not see one. But the fireworks were great, as always! There was quite a breeze (Kansas worthy) so the flashes of light seemed to fill the sky more.

Today we both awoke without any knee discomfort! Yeah! Crazy, the aches and pains as we age!! I then looked out our windows to the sea– it was very overcast and a rainstorm was coming toward us. So probably another laid back day…
We had our Java's. I'm going to have to buy some more – I have enough for tomorrow. I'm ready to try some Vietnamese Coffee. They have quite a culture for coffee here. Anyway, we had Muesli and yogurt for breakfast. We also had some Mulberry juice that we found and like. Good breakfast!
As we got around, Jeff was checking his email and discovered our flight out of Vietnam was cancelled/changed to the following day! That does not work because of our passports!! … So Jeff spent time getting us another flight out of Ho Chi Minh City (Saigon). Thankfully, it was not a long process and we are still okay on the Visa departure part.
Now we walked down to Sunset Town grocery store, as the rain seemed to have stopped. We took a little different way down the hill. This road at the back of our condo place is even quieter than the other roads in this bizarre town. Anyway, we made it, but did get a little spitting of rain on the way. We did finally stop at one of the Instagram signs of Sunset Town, and snapped a quick shot. Inside the store, we found our stuff and I got some coffee here.
We walked back to our place and made lunch. We had a PB & J sandwich and fruit salad with cute thumb size bananas, an awesome mango and some cashews. It started lightly raining again, but cleared up briefly. We took advantage and went for a swim. We had the pool to ourselves today, making getting laps done a bunch easier. (Yesterday, there were a number of people.) Afternoon was Siesta time, and I blogged as Jeff read some. It remained mostly overcast all day.
Supper was Pizza at the Meet n' eat. First we had an appetizer of Vietnamese Spring Rolls, then we had the Organic Mushroom Pizza which had tomato sauce, basil, Parmesan and Mozzarella Cheeses, onion, and mushrooms. Our young lady hostess was more bubbly then usual and showed us how “in my country, we eat” spring rolls. After we finished I used Goggle translate and asked her what her name is. She wrote it out and said “in my country, family name is said and written first, then your given name. In your country you do given name first then other is last.” I knew this but it was interesting how she phrased it. I love how she kept saying “in my country” – she says this a lot. She is proud of her country! She's a lovely person.
We went back to our place and had a banana split. Plan on doing a WhatsApp video with my mom; seeing our church family on Zoom later… also we won't miss our fireworks show!
