Well, I had trouble getting to sleep the night before. I was just so full and some indigestion if I laid flat. Finally around 0300, I was able to lay flat to sleep! I slept in until 0800. We were still not hungry for breakfast and going to go back to cooking class at 1300. So we just hung out: watching You tube, and I sorted through my pictures. I like the camera. Then I started a blog. Jeff did go get water – getting our 19 liter (5 gallon) water dispenser has paid for itself. Rosie sent a WhatsApp to Jeff to change time of the class, which was actually okay with us. We were still full!

By lunchtime, Rosie wanted change (again for the third or fourth time😅) to six pm. So we had some crackers and cheese, but did not want to have full meal. We wanted to go to Rosie's place hungry!  Afternoon was hot and no rain, we just tried to chill out. Finally, six came and we went to Rosie's.

Upon arriving, Rosie had a “student.” They had just finished their roti and sambal. The fellow student, Robert or Rob – as he introduced himself, said he was catching up to us. He is from North Carolina; owns 4 bars and restaurants; married with two teenagers; and is a connector. Anyway, we all joined in and class commenced – by eating something first!🤣😂 We ate a roti and sambal each. Rosie then made some curry powder. She tested Jeff and I to see if we remembered. Started wrong, but then memory kicked in! While Rosie was toasting the curry mix, Rob brought out some wine and offered us some. Yeah! It was a nice switch, and an 'okay' wine. Then Rosie showed Rob how to do Pineapple Curry and Potato Curry. We pitched in and stirred or watched. It was fun. There is just one of the helper ladies tonight and Rosie's daughter. Then around this time another guest showed up. A German lady, Jamila, she has been here three weeks or so, and knew Rosie. We all became acquainted and had a lovely evening.

Anyway back to cooking class, we ate the two curries and Rosie made Devilled Prawns. Jeff had some saying they were alright. I did not have any, of course. Then we learned Chicken Curry and Cheese Egg Kottu (recipes will follow). We enjoyed and ate some of these five dishes, plus the two prior😋😋. But when Rosie tried to make more we all said no🫨 and she did not. Then somewhere in the evening music came on and Rosie started moving furniture to dance. Jeff and I opted out, and left. Saying goodbye and guarantee of being back tomorrow to finish the class. 

Back at our place we felt good and not stuffed! We unround and relaxed. Then bed by 2200.

Chicken Curry: Heat about 1/2 C coconut oil, adding 1 small onion, 3 pinch mustard seeds, 1/2 handful of chopped  garlic, and curry leaves. Sautee. Add approximately 2 C chopped chicken pieces, 3 “big” pinch of curry powder, about 1/4 C chilli flakes, 3 pinch ground black pepper, 3 pinch salt and stir. Add a medium, wedged tomato, 3 pinch of green chillies, 3 pinch turmeric. Sautee a minute or so. Then add enough water to cover ingredients, and 1 bouillon. Let this simmer/slow cook for 20 minutes. Serve.

Kottu: Heat 1/2 C coconut oil, adding 1/2 handful of chopped garlic, six mixed eggs. Quick sauté then add 2 handfuls of chopped carrots, and of leeks; 3 pinches of salt and pepper. Stir to mix. Then add a whole medium sized bowl of very thin roti, cut in 1/2 X 2-3 inch strips. Mix this well. Then toss with one wedged tomato. Add around 8 spoonful's of chicken curry “gravy”, around 2 C coconut milk, and around 1/2 C grated, parmesan cheese. Mix till incorporated then serve.
